Chicken Liver Mushroom Crepes
Ingredients
- 3/4 lb fresh mushrooms, sliced or possibly
- 1 can slice mushrooms, liquid removed
- 1/4 c. minced scallions
- 6 Tbsp. butter or possibly margarine, divided
- 1 1/2 lb chicken livers, rinsed and liquid removed white sauce, (see sauce section)
- 1 Tbsp. lemon juice
- 1 tsp flavor enhancer
- 1 tsp salt
- 1 tsp minced parsley
- 24 x crepes, (see crepe recipe)
Directions
- Preheat oven to 375 degrees. In skillet over medium heat, saute/fry mushrooms and scallions in 4 Tbsp. butter, 10 min, stirring occasionally. Remove from pan. Brown chicken livers in remaining butter; dice and add in to mushroom mix. Stir in 1 c. white sauce, lemon juice, flavor enyhancer, salt and parsley. Spoon 2 Tbsp. filling onto each crepe and rool it up. Place crepes in buttered baking dish and spoon remaingn sauce over them. Bake, covered, 20 min, till sauce bubbles.
