    every household should have a Chicken A la King recipe, there must be 1000 *s around. This is a good one my grandmother used to do and is still a favourite today

    Ingredients

    • • 2 Tbs butter
    • • 1 Onion finely chopped
    • • 100 g button mushroom whole
    • • 450g fresh chicken fillets cubed
    • • 1 sml red pepper cut in thin strips
    • • Pinch salt and pepper
    • • 4 Tbs sherry
    • • 180 ml chicken stock
    • • 50ml cream

    Directions

    1. In a heavy based pot melt butter
    2. Fry onion slowly till soft add mushroom cook gently but do not colour them
    3. Remove with a slotted spoon and set aside
    4. Add the chicken and red pepper to the pot and cook until the chicken is golden brown, straining off any excess fat that may accumulate.
    5. Mix sherry and stock and addto pot,simmer till chicken tender.
    6. Return onion and mushroom and bring to boil.
    7. Remove from heat, add cream and seasoning stirring constantly
    8. Serve on Rice.
