    Korean-style chicken in chili sauce, simmered with bell peppers, onions, carrots, and diced potatoes.

    Ingredients

    • 1 cup water
    • 1 tsp chicken base
    • 1 lb chicken breast or tender loins, cubed
    • 2 yellow potatoes, peeled and cubed
    • 1 carrot, cubed
    • 1 medium onion, sliced
    • 1 green bell pepper, sliced
    • 2 garlic cloves, minced
    • 1/2 cup soy sauce
    • 3 Tbs red pepper powder
    • 2 Tbs sugar, or more to taste

    Directions

    1. In a large pot or pan with high sides, combine the water and chicken base. Bring to a light simmer over medium heat. Add in the chicken, potatoes, onion, carrot, and bell pepper.
    2. Add the garlic, soy sauce, and red pepper powder and bring to a slow boil. Cover, reduce heat, and simmer for 15-20 minutes or until the chicken is cooked through. Stir occasionally.
    3. Add the sugar and cook for another minute. Remove from heat and serve immediately with rice.
