Chicken in Chili Sauce

- 1 cup water
- 1 tsp chicken base
- 1 lb chicken breast or tender loins, cubed
- 2 yellow potatoes, peeled and cubed
- 1 carrot, cubed
- 1 medium onion, sliced
- 1 green bell pepper, sliced
- 2 garlic cloves, minced
- 1/2 cup soy sauce
- 3 Tbs red pepper powder
- 2 Tbs sugar, or more to taste
Directions
- In a large pot or pan with high sides, combine the water and chicken base. Bring to a light simmer over medium heat. Add in the chicken, potatoes, onion, carrot, and bell pepper.
- Add the garlic, soy sauce, and red pepper powder and bring to a slow boil. Cover, reduce heat, and simmer for 15-20 minutes or until the chicken is cooked through. Stir occasionally.
- Add the sugar and cook for another minute. Remove from heat and serve immediately with rice.
