Chicken Enchiladas

- 6 thin sliced chicken breasts - saute in olive oil til both sides are slightly browned.
- 1/2 cup onion - diced
- 1 can green chilies - diced
- 8 corn tortillas
- 1 12oz can of green enchilada sauce
- 1 cup shredded Mexican blend cheese
- 1 cup pico de gallo (I make my own)
Directions
- Place four tortillas on the bottom of a greased or pam sprayed casserole. Top with raw onions and green chilies. Cut up chicken into small peices and mix chicken with pico de gallo and add on top of green chilies. Add 4 more tortillas. Pour green chili enchilada sauce over and bake at 350 for 45 minutes. Top with shredded Mexican blend cheese and return to oven for 5 more minutes. Let stand 5 minutes to set and then cut and enjoy. Top with sour cream if you like. Serve on top of lettuce and tomato or with a side salad.
