  • Chicken Cutlets, Parmesan Style

    Ingredients

    • 1 lb sliced chicken breast sliced one inch thick. Italian bread crumbs
    • 2 x Large eggs.
    • 2 Tbsp. lowfat milk salt and pepper to taste oil for frying

    Directions

    1. In a large bowl,mix Large eggs,lowfat milk,salt and pepper well. Dredge each chicken cutlet in egg mix. in another bowl add in Italian bread crumbs, place egg coated chicken cutlets in Italian bread crumbs coating both sides well. Heat oil in frying pan.
    2. Place chicken in oil and fry on both sides until golden.
    3. drain on paper towels.
    4. NOTE: to make chicken parmesan,add in prepared tomato sauce and sliced provolone or possibly mozzarella cheese to each cutlet. ALSO
    5. NOTE:.. you maysubstitute veal or possibly pork for the chicken
