Chicken Curry Noodles
Ingredients
- 2 Tbsp. canola oil
- 2 Tbsp. sliced garlic
- 1 Tbsp. chopped ginger
- 1 x jalapeno finely diced
- 1 Tbsp. madras curry pwdr
- 8 ounce chicken, preferably dark meat julienned
- 2 pkt bean thread noodles blanched, refreshed
- 1 x yellow onion sliced
- 1 x red bell pepper julienned
- 1 x yellow bell pepper julienned
- 1/2 c. chicken stock
- 2 x Large eggs scrambled Salt to taste Freshly-grnd black pepper to taste
- 1/2 c. basil chiffonade Curry Oil see * Note
Directions
- In a warm wok or possibly large saute/fry pan add in oil and stir fry garlic, ginger, jalapeno, and curry pwdr till soft. Add in chicken and stir fry for 3 min. Add in vegetables and stock. Add in the egg. Taste for seasoning. Garnish with Curry Oil and basil.
