  • Mexican Chicken And Noodles Casserole

    Ingredients

    • 1/2 pkt Noodles, cooked
    • 1/2 tsp Butter
    • 3/4 c. Celery, minced
    • 2 x Green pepper rings, minced
    • 3/4 c. Onion, minced
    • 1 can Cream of chicken soup
    • 2/3 c. Lowfat milk
    • 1/2 c. Lowfat sour cream
    • 2 c. Cheddar cheese, shredded
    • 2 c. Chicken or possibly turkey, cooked minced up
    • 1/2 lb Mushrooms, sliced
    • 1/2 c. Sliced almonds Jalepenos, chopped

    Directions

    1. In a microwave casserole dish, add in celery, peppers, onion, and butter. Cook for 2 min. Remove from dish. Line casserole with tortilla strips. In another bowl, stir in soup, lowfat milk, lowfat sour cream, and cheese. Mix.
    2. Add in cooked vegetables, noodles, chicken, mushrooms, and jalepenos. Pour into into casserole. Top with almonds. Microcook till heated through, 2-4 min.
