Mexican Chicken And Noodles Casserole
Ingredients
- 1/2 pkt Noodles, cooked
- 1/2 tsp Butter
- 3/4 c. Celery, minced
- 2 x Green pepper rings, minced
- 3/4 c. Onion, minced
- 1 can Cream of chicken soup
- 2/3 c. Lowfat milk
- 1/2 c. Lowfat sour cream
- 2 c. Cheddar cheese, shredded
- 2 c. Chicken or possibly turkey, cooked minced up
- 1/2 lb Mushrooms, sliced
- 1/2 c. Sliced almonds Jalepenos, chopped
Directions
- In a microwave casserole dish, add in celery, peppers, onion, and butter. Cook for 2 min. Remove from dish. Line casserole with tortilla strips. In another bowl, stir in soup, lowfat milk, lowfat sour cream, and cheese. Mix.
- Add in cooked vegetables, noodles, chicken, mushrooms, and jalepenos. Pour into into casserole. Top with almonds. Microcook till heated through, 2-4 min.
