  • Chicken Cordon Bleu in a Pouch

    Ingredients

    • 4 Chicken Breast filets pounded thin.
    • Sliced ham or Pancetta
    • 4 slices Swiss cheese
    • 1 green zucchini, 1 yellow zucchini
    • a handful of sweet grape tomatoes or cherry tomatoes
    • 1 can of cream of mushroom soup
    • 1 cup of white wine
    • 4 Tbsp. all purpose flour
    • 2 tsp. dried thyme
    • salt/pepper
    • Heavy Duty Foil

    Directions

    1. Tear off a large 2 foot square piece of foil
    2. Dredge each chicken breast in flour mixed with salt, pepper and a dash of thyme. Place onto right side of your foil. Place a narrow slice of ham and a slice of Swiss cheese folded in half onto one side of the chicken breast and fold over like a sandwich. Top with some sliced zucchinis and a few tomatoes. Spoon over 3 or 4 spoonfuls of Cream of Mushroom soup and another small pinch of dried thyme. Carefully fold over the foil creating a pouch and seal up on two sides by folding the foil sides together. Before sealing up the last side, pour in a splash of white wine. Fold up 3rd side to seal the foil pouch. Place carefully onto the campfire grill or *directly onto hot coals.
    3. Note: Campfire coals can be much hotter than your home oven, food will cook much faster on red hot coals. This dish is best if elevated slightly above the coals upon a grill.
