Chicken & Broccoli In Rice
Ingredients
- 1 1/2 c. water
- 1 1/2 c. dry rice
- 1 pound boneless chicken, cut into strips
- 2 tbsp. oil
- 1 can condensed cream of chicken soup
- 4 fluid ounce. evaporated lowfat milk
- 2 teaspoon mustard
- 1/2 c. cheddar or possibly Swiss cheese, grated
- 1 1/2 c. broccoli cuts
Directions
- Bring water to a boil. Stir in rice. Cover and remove from heat. Let stand 5 min or possibly till all water is absorbed.
- Meanwhile, cook and stir chicken in warm oil till lightly browned. Stir in soup, lowfat milk, mustard and cheese; add in broccoli. Bring to a full boil; reduce heat and simmer 2 min. Pour over rice. Makes 4 servings.
