Chicken Breast with Crab Stuffing
Not sure what type of cuisine this falls under, but it is outstanding! Ingredients
- 4 split chicken breasts, boned, skin on
- 1/2 tsp salt
- 1 tsp white pepper
- 1 tsp paprika
- For stuffing:
- 4 slices white bread
- 1/2 C half and half
- 1 1/2 C frozen cooked crab, thawed, shredded and drained
- 1/4 C melted butter
- 1/8 tsp cayenne pepper
- 1/4 tsp salt
- 1 T parsley
- 1/4 tsp poultry seasoning
- 1/8 tsp thyme
- For sherry mushroom sauce:
- 1/4 C melted butter
- 1/4 C cooking sherry
- 1/2 lb fresh mushrooms, sliced
- 1/2 tsp garlic salt
Directions
- Prepare stuffing:
- Toss bread with the half and half
- Add other ingredients and stir until combined
- Set aside
- Rub chicken with butter.
- Place in pan, skin up
- Bake at 350F, uncovered, for 25 minutes
- Sprinkle salt, white pepper, and paprika on chicken.
- Prepare Sherry Mushroom Sauce:
- Saute mushrooms in butter. Add other ingredients and remove mushrooms.
- Add sherry sauce to chicken after removing mushrooms.
- Bake chicken and sherry sauce 10 minutes
- Turn chicken breasts over
- Drain the liquid and save
- Fill each chicken cavity with stuffing, mound and press
- Spoon on mushrooms and drained liquid
- Bake 30 minutes
- Baste chicken 1-2 times during final baking
- * may brown under broiler if desired
