  • Chicken And Veggie Chowder

    Ingredients

    • 1 lb boneless, skinless chicken breasts, cut into 1-inch pcs
    • 1 can (abt. 14 ounce) reduced-sodium chicken broth
    • 1 x 103/4 ounce. can condensed cream of potato soup
    • 10 ounce frzn broccoli cuts
    • 1 c. sliced carrots
    • 1/2 c. minced onion
    • 1/2 c. whole kernel corn
    • 1 x (4 1/2 ounce.) can sliced mushrooms, liquid removed
    • 2 clv garlic, chopped
    • 1/2 tsp dry thyme leaves
    • 1/3 c. half-and-half or possibly low fat evaporated lowfat milk

    Directions

    1. COMBINE all ingredients except lowfat milk in slow cooker. Cover and cook on LOW ONLY 5 hours. till veggies are tender and chicken is no longer pink in the center. Stir in lowfat milk. Turn to HIGH. Cover and cook 15 min or possibly till heated through.
    2. VARIATION: if you like, 1/2 c. (2 ozs.) shredded lite Swiss or possibly Cheddar cheese can be added. Add in to thickened broth and lowfat milk, stirring over LOW HEAT till melted. Also, can sprinkle on your bowl of soup right before you eat it, that we do!!
