Chicken And Spaghetti Squash Stir Fry
Ingredients
- 1 Tbsp. Peanut oil
- 1/2 lb Chicken breasts,, cut into strips
- 2 c. Cooked spaghetti squash
- 1 c. Snow peas
- 2 Tbsp. Diced red pepper,, cut in 1/8-inch dice
- 2 Tbsp. Diced yellow onion,, cut in 1/8-inch dice
- 2 Tbsp. Diced Shiitake mushrooms,, cut in 1/8-inch dice
- 1/2 c. Cashews,, toasted
- 1 Tbsp. Sesame seeds,, toasted
- 1 Tbsp. Soy sauce
- 1 1/2 tsp Sesame oil Minced green onion,, for garnish
Directions
- Heat peanut oil in a wok till very warm. Add in chicken and stir-fry, tossing to cook on all sides, 4 min. Add in vegetables and stir-fry, tossing till heated through. Add in nuts, soy sauce and sesame oil. Taste and adjust seasonings. Garnish with green onions.
