Chicken And Sausage With Rice
Ingredients
- 8 x Chicken legs
- 1/8 tsp Pepper
- 1 lb Italian sausage 1" pcs
- 2 x Green peppers cut in strips
- 1 x Clove garlic, chopped
- 1 x 28 ounce can tomatoes
- 1/2 lb Mushrooms, quartered
- 1 x Bay leaf
- 1/2 tsp Salt
- 2 Tbsp. Oil
- 2 c. Uncooked rice
- 1 lrg onion sliced
- 1/2 c. Red wine
- 3/4 c. Chicken broth
- 1 tsp Basil, crushed
- 1/4 tsp Sugar
Directions
- Season chicken with salt and pepper. In a large skillet heat oil. Add in chicken and cook, turning, till browned, about 5 min. Remove and set aside. Add in sausages to skillet and brown. Remove and set aside.
- Add in rice, green pepper, onion and garlic to skillet; cook, stirring till rice is lightly browned, about 5 min. Stir in wine and simmer 2 min. Stir in tomatoes, broth, mushrooms, basil, bay leaf and sugar.
- Return chicken and sausages to the skillet. Reduce heat; cover and simmer 35 - 40 min till chicken is tender. Remove and throw away fat.
