Chicken and Pasta
A while back I had found a season packet from McCormick called Chicken and pasta in the Italian section of their seasonings. Last week I went back to the only store I had found only to discover that they no longer carried it and all the other stores in the area didn't have it either. So I went to their website wrote down what I needed and put this recipe together and I will be darned it tasted the same exactly to a " T ". Which ends the hunt for that season packet. Ingredients
- 1 sm onion chopped & diced
- 1 tsp paprika
- 1 tsp oregano
- 2 tsp parsley
- ¼ tsp red pepper
- 1 tsp salt
- 1 garlic clove or 1 tbsp. minced garlic
- 1 tsp sugar
- 1 red bell pepper
- 1 tsp lemon juice
- 1 tbsp. Parmesan and/or Romano cheese powder form or both
- 2 cups rotini pasta
- 1 pound chicken breast
- 2 cups mozzarella cheese divided
- 2 cups water room temp.
- 1 can Rotel diced tomatoes
Directions
- Preheat oven to 350ºF.
- Place pasta, chicken and 1 cup of the cheese in 13x9-inch baking dish.
- Mix water, Seasonings and tomatoes until well blended. Pour over pasta and chicken.
- Stir to coat well, making sure most of the pasta is covered with sauce.
- Cover with foil.
- Bake 45 minutes or until chicken is cooked through and water is absorbed.
- Remove foil and stir.
- Sprinkle with remaining 1 cup cheese on top and Bake, uncovered, 5 minutes longer or until cheese is melted.
- Let stand 5 minutes.
