Chicken And Balsamic Wine Sauce
Ingredients
- 1 lb boneless chicken breasts
- 1/2 c. flour
- 2 Tbsp. butter
- 2 Tbsp. extra virgin olive oil
- 2 x shallots, chopped
- 10 x sun-dry tomatoes, minced
- 1 c. mushrooms, sliced
- 1/4 c. white wine
- 1/8 c. balsamic vinegar Rosemary Thyme Salt and pepper
Directions
- Cut chicken in 1-inch squares. Lightly flour, heat butter and oil over medium-high flame. Add in shallots and saute/fry briefly. Add in chicken and brown on all sides.
- Add in mushrooms and tomatoes. Cook briefly. Add in wine, vinegar and spices, cook till sauce is thick. Nice over rice or possibly pasta.
