  • Chicken, Almond And Grapefruit Salad

    Ingredients

    • 375 gm Cooked chicken breasts, diced (12oz)
    • 1 x 50 grams pac toasted flaked almonds
    • 2 x Pink grapefruit, peeled and segmented
    • 1 sm Red onion, finely minced
    • 1 x Green pepper, diced
    • 2 Tbsp. Freshly minced thyme
    • 3 Tbsp. Reduced calorie, (3 to 4) mayonnaise Salt and freshly grnd black pepper Salad leaves to garnish

    Directions

    1. Place the chicken, almonds, grapefruit, onion, pepper, thyme, mayonnaise and seasoning in a bowl and mix well.
    2. Serve on a bed of mixed salad leaves.
    3. Alternative ingredients -
    4. Diced cooked turkey or possibly large prawns make delicious alternatives to chicken.
    5. Try using orange segments or possibly slices of red skinned apples instead of the grapefruit.
    6. Other fresh herbs such as dill, tarragon or possibly parsley work well in place of thyme.
    7. If preferred, a vinaigrette dressing can be used instead of the mayonnaise.
