Chicken Fruit And Pasta Salad
Ingredients
- 50 gm Pasta, (2oz)
- 2 Tbsp. Extra virgin olive oil
- 500 gm Cooked chicken, roughly minced (1lb)
- 1 x Apple, peeled, cored and diced
- 1 x Banana, sliced
- 6 x Salad onions, sliced on the diagonal
- 1/2 x Cucumber, peeled and diced
- 50 gm Pistachio nuts, (2oz)
- 1 x Lemon, juice of
- 150 ml Natural yogurt, (1/4 pint)
- 150 ml Low calorie mayonnaise, (1/4 pint) Salt and freshly grnd black pepper
Directions
- Cook the pasta as per the pack instructions. Drain and toss in the oil.
- Place the chicken, apple, banana, salad onions, cucumber, pistachio nuts and pasta in a bowl.
- Mix together the lemon juice, yogurt and mayonnaise and toss into the salad. Season to taste.
- NOTES : A quick and easy fruit, pasta and chicken salad.
