Chick Pea And Basmati Rice Salad
Ingredients
- 3/4 c. Cooked chick peas
- 1 c. Cooked basmati rice
- 1/2 x Red bell pepper, diced
- 1/2 x Green bell pepper, diced
- 1/2 x Yellow bell pepper, diced
- 4 x Scallions, sliced Salt to taste
- 2 tsp Toasted sesame seeds
- 1 tsp Sesame oil
- 1/4 tsp Cumin
- 2 Tbsp. Lemon juice
- 1 Tbsp. Extra virgin olive oil
Directions
- + Ts Salt
- Toss together chick peas, rice, bell peppers, scallions in a large bowl.
- Whisk together all the ingredients for the vinaigrette. toss with salad & season to taste.
