Ingredients

  • 3/4 c. Cooked chick peas
  • 1 c. Cooked basmati rice
  • 1/2 x Red bell pepper, diced
  • 1/2 x Green bell pepper, diced
  • 1/2 x Yellow bell pepper, diced
  • 4 x Scallions, sliced Salt to taste
  • 2 tsp Toasted sesame seeds
  • 1 tsp Sesame oil
  • 1/4 tsp Cumin
  • 2 Tbsp. Lemon juice
  • 1 Tbsp. Extra virgin olive oil

Directions

  1. + Ts Salt
  2. Toss together chick peas, rice, bell peppers, scallions in a large bowl.
  3. Whisk together all the ingredients for the vinaigrette. toss with salad & season to taste.
