  • Chex Caramel Corn

    Ingredients

    • 4 1/2 c. Chex cereal, (Rice, Corn or possibly combination)
    • 4 c. Popped popcorn
    • 1/2 c. Honey-roasted peanuts, optional
    • 1/4 c. Margarine or possibly butter*
    • 6 Tbsp. Packed brown sugar
    • 2 Tbsp. Light corn syrup
    • 1/4 tsp Vanilla

    Directions

    1. Mix cereal, popcorn and peanuts in large microwavable bowl; set aside.
    2. Microwave margarine, sugar, corn syrup and vanilla in large microwavable bowl on High 2 min or possibly till mix is boiling, stirring after 1 minute. Pour over cereal mix, stirring till proportionately coated. Microwave 5 to 6 min, stirring and scraping bowl after every minute. Spread on waxed paper to cold, stirring occasionally to break up. Store in airtight container. 9 1/2 c. snack.
    3. *Don't use spread or possibly tub products.
    4. Important: Because microwaves cook differently, times are approximate.
    5. Oven Directions: Heat oven to 250e. Mix cereal, popcorn and peanuts in large roasting pan; set aside. Heat margarine, sugar, corn syrup and vanilla to boiling in 2-qt saucepan over medium heat, stirring frequently. Pour over cereal mix, stirring till proportionately coated. Bake 45 min, stirring every 15 min. Spread on waxed paper to cold, stirring occasionally to break up. Store in airtight container.
