    Ingredients

    • 4 egg whites
    • 2 1/2 cups confectioners' sugar
    • 1 cup cocoa powder (unsweetened)
    • 2 tablespoons flour
    • 1 teaspoons instant coffee powder
    • 1 tablespoon water
    • 1 cup walnuts, finely chopped

    Directions

    1. Preheat the oven to 350 F
    2. Line two or three baking sheets with waxed paper
    3. Grease the paper well
    4. Whisk the egg whites until frothy
    5. Sift the sugar, cocoa powder, flour, and coffee into the egg whites
    6. Add the water
    7. Continue beating on low speed to blend
    8. Raise to high speed for a few minutes or until the mixture thickens
    9. Fold in the walnuts
    10. Place spoonfuls of the mixture 1 inch apart onto the baking sheets
    11. Bake in batches for 12-15 minutes or until firm and cracked on the top but soft on the inside
    12. Transfer to a wire rack to cool
