  • Cherry Apple Cobbler

    Ingredients

    • 2 slices raisin bread, made into crumbs
    • 2 teaspoon each granulated sugar and butter
    • 1/8 teaspoon grnd cinnamon
    • 20 lg. frzn pitted cherries (no sugar added)
    • 2 sm. apples, cored, pared and sliced
    • 1/4 c. water
    • 1-inch piece cinnamon stick
    • 1 teaspoon cornstarch

    Directions

    1. In small bowl combine crumbs, 1 tsp. sugar, and the butter and grnd cinnamon; set aside.
    2. In small saucepan combine fruit, 3 Tbsp. water, and the cinnamon stick; cook over low heat for about 3 min. Combine remaining Tbsp. water with cornstarch, stirring to dissolve; add in to pan and cook, stirring constantly, till mix is thickened. Remove from heat and remove and throw away cinnamon stick; add in remaining tsp. sugar and stir to combine. Into each of four 6-oz custard c. spoon 1/4 of fruit mix; top each with 1/4 of crumb mix and bake at 400 degrees, till topping is browned, about 15 min. Serve hot. Makes 4 servings.
