Cherry -almond clafoutis
THIS IS A FRENCH DESSERT EASY TO MAKE AND CHERRIES ARE IN SEASON NOW AND THEN THEY ARE GONE .JUST MIX THE BATTER AND POUR OVER THE CHERRIES AND BAKE TILL BROWN. Ingredients
- 3cups small fresh sweet or sour cherries
- 1-1-2tb s kirsch-cherry brandy
- 1/2cup sliced almond
- 1-12tbs.unsalted butter 1tbs cut into small pieces
- 1cup halfand half
- 3ozunbleachedall purpose flour sifted
- 2 tblsgranulated sugar
- 1/4 cup heavy cream
- 3 large eggs
- 1/4 tsp pure almond extract
- 1/8table salt
Directions
- center rack in the middle of the ovenheat to 350 degrees
- toss cherries with kirsch set aside toss periodically for 30 min.
- scatter almonds on a baking sheet and toast until golden and set aside ,increase temp in oven to 400degrees
- Grease a shallow round 11 inch quiche or gratin dish with 1/2 tbs butter
- Combine the milk,flour,1/4 cup sugar,cream eggs,almond extract,and saltand mix on medium speed to aerate for 5 min.drain the cherries and and stir the liquid into the batter.
- Arrange cherries in dish and pour batter over the top.bake for 15 minutes.sprinkle toasted almonds and 1 tbs remaining sugar on top and dot with remaining butterbake untill puffed and 35-40 min.
- transfer to rack and let coolserve warm or room temp .great with vanilla ice cream or whipped cream and a glass of wine enjoy
