  • Cherokee Pepper Pot Soup

    Ingredients

    • 1 lb Venison or possibly beef short ribs or possibly shanks
    • 2 quart Water
    • 2 lrg Onions, quartered
    • 2 x Ripe tomatoes, seeded and diced
    • 1 lrg Sweet bell pepper, seeded and diced
    • 1 c. Fresh or possibly frzn okra
    • 1/2 c. Diced potatoes
    • 1/2 c. Sliced carrots
    • 1/2 c. Fresh or possibly frzn corn kernels
    • 1/4 c. Minced celery Salt and grnd pepper to taste

    Directions

    1. Put meat, water, and onions in a heavy soup kettle. Cover and bring to a boil over high heat. Reduce heat to low and simmer for 3 hrs.
    2. Remove meat, let cold, and throw away bones, returning meat to pot. Stir in remaining vegetables and simmer, partially covered for 1 1/2 hrs.
    3. Season with salt and pepper.
    4. Serves 4 to 6.
