Cajun Pepper Pot Soup
Ingredients
- 8 lbs Smoked turkey wings
- 4 bay leaves
- 2 gals water
- 4 lbs yams
- 2 lbs Okra
- 1 lb kale
- 1/2 cup thyme
- salt
- pepper
- 1 lb onion spinach
- 1 lb scallions
- 3 lbs spinach
Directions
- In a tilt grill add 2 gallons of water, smoked turkey wings, and bay leafs.
- Cook on medium heat and simmer for approx one hour.
- Then add yams, okra, and kale.
- Add thyme, salt, and epper to taste.
- Add chopped onions and scallions.
- Cook for another 30 minutes.
- Add spinach boil for an additional 5 minutes then pan-up.
