  • Chef Paul's French Silk Pie

    Ingredients

    • 20 x Low fat chocolate sandwich cookies
    • 1/3 c. low cholesterol egg substitute Cooking spray
    • 3 x 1.5 oz Chocolate Bars
    • 12 ounce reduced fat cream cheese
    • 2 Tbsp. diet instant vanilla pudding mix
    • 1/2 c. brown sugar
    • 1 c. fat free whipped topping

    Directions

    1. For the crust, crush the cookies in a food processor till fine. Add in 1/3 c. egg substitute. Form into dough. Spray a 9 - inch pie plate with cooking spray. Spread the cookie mix around the bottom of the pie plate. The mix will be sticky. It may be helpful to use a piece of wax paper or possibly a plastic bag to help spread. Bake in a 350 degrees oven for 15 min. Cold. Heat the chocolate bars either in a microwave or possibly over the stove. Combine with all remaining ingredients except the whipped topping. Mix on low speed till ingredients are incorporated. Whip on high speed for four min. Pour mix over cooled pie shell. Allow pie to set in the refrigerator for at least 4 hrs. Spread with whipped topping and serve.
