  • Cheesy O'Brien Egg Scramble

    Great for a brunch or when you have overnight guests!

    Ingredients

    • 1 pkg (28oz) frozen O'Brien hash brown potatoes
    • 1/2 tsp garlic salt
    • 1/4 tsp pepper
    • 1 can condensed cheddar cheese soup
    • 1 lb bacon or sausage cooked and crumbled
    • 12 eggs lightly beaten
    • 2 Tbls butter
    • 2 cups (8oz) shredded cheddar cheese

    Directions

    1. In a large skillet, prepare hash browns according to package directions.
    2. Sprinkle with garlic salt and pepper.
    3. Transfer to a greased 2 1/2 qt baking dish.
    4. Top with soup.
    5. Set aside 1/2 c of meat; sprinkle remaining meat over soup.
    6. In another skillet, scramble eggs until nearly set.
    7. Spoon into dish.
    8. Sprinkle with cheese and reserved meat.
    9. Bake uncovered at 350 degrees for 20-25 minutes
