Cheesy O'Brien Egg Scramble
Great for a brunch or when you have overnight guests! Ingredients
- 1 pkg (28oz) frozen O'Brien hash brown potatoes
- 1/2 tsp garlic salt
- 1/4 tsp pepper
- 1 can condensed cheddar cheese soup
- 1 lb bacon or sausage cooked and crumbled
- 12 eggs lightly beaten
- 2 Tbls butter
- 2 cups (8oz) shredded cheddar cheese
Directions
- In a large skillet, prepare hash browns according to package directions.
- Sprinkle with garlic salt and pepper.
- Transfer to a greased 2 1/2 qt baking dish.
- Top with soup.
- Set aside 1/2 c of meat; sprinkle remaining meat over soup.
- In another skillet, scramble eggs until nearly set.
- Spoon into dish.
- Sprinkle with cheese and reserved meat.
- Bake uncovered at 350 degrees for 20-25 minutes
