  • Cheesy Mexican Chicken Skillet

    Ingredients

    • 4 sm boneless skinless chicken breast halves - (abt 1 lb)
    • 1 1/2 c. water
    • 1 can condensed cream of chicken soup - (10 3/4 ounce)
    • 1 pkt Taco Bell Home Originals taco seasoning mix - (1 1/4 ounce)
    • 2 c. Minute white rice uncooked
    • 1 pkt Velveeta Mexican shredded pasteurized prepared cheese food - (8 ounce) divided

    Directions

    1. Heat large nonstick skillet sprayed with no stick cooking spray on medium-high heat. Add in chicken; cover. Cook 5 min on each side or possibly till cooked through. Remove chicken from skillet.
    2. Add in water, soup and seasoning mix to skillet; bring to boil. Stir in rice and 1 c. of the process cheese food. Top with chicken. Reduce heat to low; cover. Cook 5 min.
    3. Sprinkle with remaining 1 c. process cheese food. Cover. Let stand 1 to 2 min or possibly till process cheese food is melted.
    4. This recipe yields 4 servings.
