Cheesey Scalloped Potatoes - lower calorie
These chessey medallions are a great side dish. Easy to make and sooo yummy! Ingredients
- 1/2 a large Onion cut into rings
- 2 tbsps butter
- 11/4 cups milk
- 2 tablespoons all-purpose flour
- 1/4 tsp salt
- 1 1/2 cups cheddar or mixed cheese (shredded)
- 3- 4 potatoes (medium, peeled and thinly sliced, 3 cups)
Directions
- Spray a 1-1/2-quart casserole with nonstick spray coating.
- In a small saucepan stir together butter, milk and flour, wisk until thinkens, about 30-45 seconds
- Add in shredded cheese and until melted.
- Cook and stir over medium heat until thickened
- Place half of the potatoes in the casserole.
- Top with a layer of onion rings
- Top with half of the sauce.
- Repeat layers with remaining potatoes and sauce.
- Bake, covered, in a 400 degree F oven about 65 minutes or until potatoes are tender
- Remove from oven and sprinkle with cheese if desired.
