Cheesey Scalloped Potatoes - lower calorie

These chessey medallions are a great side dish. Easy to make and sooo yummy!

Ingredients

  • 1/2 a large Onion cut into rings
  • 2 tbsps butter
  • 11/4 cups milk
  • 2 tablespoons all-purpose flour
  • 1/4 tsp salt
  • 1 1/2 cups cheddar or mixed cheese (shredded)
  • 3- 4 potatoes (medium, peeled and thinly sliced, 3 cups)

Directions

  1. Spray a 1-1/2-quart casserole with nonstick spray coating.
  2. In a small saucepan stir together butter, milk and flour, wisk until thinkens, about 30-45 seconds
  3. Add in shredded cheese and until melted.
  4. Cook and stir over medium heat until thickened
  5. Place half of the potatoes in the casserole.
  6. Top with a layer of onion rings
  7. Top with half of the sauce.
  8. Repeat layers with remaining potatoes and sauce.
  9. Bake, covered, in a 400 degree F oven about 65 minutes or until potatoes are tender
  10. Remove from oven and sprinkle with cheese if desired.
