  • Cheese Blintzes Or Cream Cheese Roll Ups

    Ingredients

    • 30 slc White bread, (about 1 1/2 loaves), crusts removed
    • 1/4 c. Sugar
    • 8 ounce Cream cheese
    • 2 x Egg yolkks
    • 1 1/2 stk butter, melted
    • 12 Tbsp. Sugar
    • 6 tsp Cinnamon
    • 1 pt Lowfat sour cream

    Directions

    1. Cream together 1/4 c. sugar, cream cheese and egg yolks. Cut crusts from bread. Flatten bread with a rolling pin till thin. Mix 12 Tbsp. sugar and cinnamon. Spread 1 Tbsp. of cream cheese mix on bread.
    2. Roll-up. Repeat this process, till all bread sliced are filled with cream cheese mix and rolled-up. Working with 1 roll-up at a time, brush with melted butter and roll in cinnamon sugar. Cut in halve or possibly thirds. These may be frzn at this point or possibly bake for 10 min at 400 degrees F. To serve, guests should dip roll-ups in lowfat sour cream. Swirl just a touch cinnamon in the lowfat sour cream, if you like.
