Chard with Onions, Tomatoes and Dijon Mustard, summer

I like mustard.

Well, to clarify, I like good mustard.

The yellow, ball-park mustard so popular in the US is okay on hot dogs but I wouldn’t bother with it for anything else. Nor would I have it on a hot dog if other mustard was available.

Fortunately, we live in a country that appreciates, and makes, good mustard…. Lots and lots of good mustard.

A few years ago I may have gotten carried away adding mustard to everything I made. Mon mari requested a mustard moratorium.

Fortunately, tastes (his) change.

I’m working it back into the repertoire – but a bit more carefully.

Chard with Onions, Tomatoes and Dijon Mustard

Total time: 15 minutes

Ingredients:

Instructions:

Heat oil in a large skillet. Add onion and sauté until tender, about 5 minutes.

Add the garlic and stir-fry over medium heat 1 minute.

Add the chard, stir and turn until the leaves wilt and it all fits into the skillet.

Add the tomatoes, wine, mustard, salt, chili powder, stir well and cook until tomato softens, about 5 minutes longer.

The nice thing about summer cooking is that it’s so quick and easy.

The nice things about summer morning is we never know what we might see on our walks.

This morning we saw a balloon.

It appeared when we were about half-way home, just over the horizon. It was moving slowly and I thought I had plenty of time to get home, grab the camera and get some photos.

I was wrong….. A breeze came up and it went floating by rather quickly.

I don’t thing the dogs actually see it, but they do hear the whoosh when the burners ignite – and then search frantically for the source of the sound.

Dogs aren’t very good with the concept of ‘up’.

They are excellent at bringing leaves into the house, though.

This is why I can’t be bothered to clean.

I had just finished sweeping, emptied the dog hair and leaves, came back in the house to find more leaves.

Think of what it’s like in the fall!

They like to stand or sit in the doorway – gives good access for monitoring the bunnies and neighbors and tractors and such. If something moves they race out the door, run frantically around the fence, gathering as many leaves and sticks as possible in their fur.

Then they come back inside to tell me about it all, thus dragging the crap all the way through the house to my desk.

Repeat….. Constantly….

I leave the door open so they can go in and out at will. Otherwise I would be getting up every 5 minutes to let then out and back in and out and back in….

Summer!

They sleep well…
