Chandra's Crab Cakes
Ingredients
- 3 ounce Pork Rinds,Crumbled
- 4 tsp Water
- 2 c. Canned Crab,About 1 Lb.
- 1/3 c. Chopped Onion
- 1/3 c. Chopped Celery
- 1/3 c. Chopped Green Pepper
- 1 x Egg,Beaten
- 3/4 c. Mayonnaise
- 1 tsp Mustard
- 2 tsp Lemon Juice
- 1 tsp Worcestershire
- 1/4 tsp Warm Pepper Sauce
- 1 tsp Old Bay
- 1 tsp Chopped Parsley
- 1/4 tsp Pepper
Directions
- Put pork rind crumbs in a large bowl, and mix with sufficient water to soften them.
- Flake the crab, remove any cartilage, and combine with the pork rind crumbs.
- Add in the rest of the ingredients and mix well. Shape into 8 to 10 patties (pack them pretty tightly so they do not fall apart)
- Heat 2 to 4 tbsp. vegetable oil in a skillet, and saute/fry on each side till golden.
- Alternately, you could broil them.
- I omitted the salt from this recipe because the pork rinds I used (Bakenets) were already pretty salty.
- It originally called for 1 teaspoon of salt.
- Makes 8 servings
