Celery, Spinach And Feta Parcels
Ingredients
- 1 sm Pack Feta cheese
- 1/2 lb Fresh spinach
- 2 stk celery
- 2 x Rashers smoked bacon
- 1/2 pkt Filo pastry
- 4 ounce Butter Black pepper and salt Nutmeg
Directions
- Cut the bacon into fine strips and finely dice the Feta and celery.
- Wash and remove stalks and finely shred the spinach. Heat butter and cut pastry into 4 inch squares.
- Cook the bacon and celery in a little butter, add in the spinach, and allow to cold slightly.
- Add in the cheese, grated nutmeg and season to taste.
- Brush the individual cake moulds with butter. Brush each square with butter and layer three together to create a star.
- Place in a mould, put a tsp. of the mix in the centre and mix in the excess pastry.
- Brush with butter and place in a warm over (200 C / 392 F) for approximately 5-10 min till golden.
- Serve warm with a crisp salad garnish and vinaigrette.
