  • Celery, Spinach And Feta Parcels

    Ingredients

    • 1 sm Pack Feta cheese
    • 1/2 lb Fresh spinach
    • 2 stk celery
    • 2 x Rashers smoked bacon
    • 1/2 pkt Filo pastry
    • 4 ounce Butter Black pepper and salt Nutmeg

    Directions

    1. Cut the bacon into fine strips and finely dice the Feta and celery.
    2. Wash and remove stalks and finely shred the spinach. Heat butter and cut pastry into 4 inch squares.
    3. Cook the bacon and celery in a little butter, add in the spinach, and allow to cold slightly.
    4. Add in the cheese, grated nutmeg and season to taste.
    5. Brush the individual cake moulds with butter. Brush each square with butter and layer three together to create a star.
    6. Place in a mould, put a tsp. of the mix in the centre and mix in the excess pastry.
    7. Brush with butter and place in a warm over (200 C / 392 F) for approximately 5-10 min till golden.
    8. Serve warm with a crisp salad garnish and vinaigrette.
