  • Celery Seed Coleslaw, Bon Appetit

    Ingredients

    • 8 c. thinly-sliced green cabbage (abt 1/2 large head)
    • 2/3 c. thinly-sliced green onions
    • 1/2 c. finely-minced carrot
    • 1/2 c. minced green bell pepper
    • 1/2 c. low-fat mayonnaise
    • 2 Tbsp. apple cider vinegar
    • 1 tsp celery seeds Salt to taste Freshly-grnd black pepper to taste

    Directions

    1. Combine cabbage, green onions, carrot and bell pepper in large bowl.
    2. Whisk mayonnaise, apple cider vinegar and celery seeds in small bowl to blend. Add in dressing to cabbage mix and toss to coat. Season to taste with salt and pepper. (Can be prepared 3 hrs ahead. Cover and chill.)
    3. This recipe yields 6 servings.
    4. Comments: This pretty slaw with a celery seed and cider vinegar dressing is perfect for a Fourth of July picnic.
