    • 1 medium carrot, sliced thin on a diagonal
    • 1/2 cup of sun dried tomatoes, soaked, drained and chopped.
    • 1/4 cup raw cashews ( Trader Joe has the lowest prices on raw notes)
    • 1/4 cup white or brown (organic) raisins
    • 1/4 tsp ground tumeric
    • salt and pepper to taste

    Directions

This delicious stir fry can be eaten as a meal by itself or served with whole grain pasta, brown rice, or quinoa

It contains one of my favorite vegetables, cauliflower and is not only is gluten free and vegan it, but it is also easy to make.

It gets its rich color from tumeric. Since reading about the benefits of tumeric, I have been trying to find ways to incorporate it in to my food. Tumeric is a spice that is loaded with antioxidants, thought to be anti-inflammatory, and great for the brain. It has a very mild flavor that enhances most food. Just beware its brilliant yellow color will stain ( I mean big time) so be careful of your counter tops, tablecloths etc.

I bought the raw cashews and organic raisins from Trader Joes which tends to be a little more reasonable on the price.

    Ingredients:

Steam cauliflower for 8-10 minutes Saute onion in olive oil for about 3 minutes. Add cauliflower and remainder of ingredients, stir and saute until liquid is absorbed. Serve as a meal or over cooked pasta, brown rice, or quinoa.

When first I tried to copy and paste, everything on the page highlighted - photos, ads and all. Then I tried a few more times trying to be more selective at capturing the recipe. It did the trick. Now I'm ready to go! Thanks.

            Sadie,
Sorry about that . I am not sure how to fix it , but will look into it .n the meantime, you can go to my website www.glutenfreewithjudee.blogspot.com and the recipe should copy paste.

This recipe will not print, and needs some editing on your part to let it do so. When I print preview it only the introductory paragraphs display, with no recipe. Can't even copy and paste it - doesn't work. Would love to try this out but not if I have to hand-copy the recipe!
