Cathy's Kitchen Sink Shrimp Salad
Ingredients
- 2 x Lettuce heads, torn
- 1 x Green bell pepper cut in 1" squares
- 1 x Red bell pepper cut in 1" squares
- 1 lb Large shrimp, cooked
- 13 x Basil leaves, cut in strips
- 4 x Chive stalks, in 1" lengths Few sprigs parsley
- 4 x Hard-boiled Large eggs, sliced
- 1 sprg oregano strip the leaves and use
- 4 sprg thyme strip the leaves and use
- 6 x Tomatoes, coarsely minced
- 1 slc Swiss cheese, diced
- 4 x Green onions, incl. tops diced
- 3 x Carrots, minced
- 1 head of broccoli flowerets
- 3 stalk celery (up to 4) diced
- 1 lrg Yellow summer squash sliced
- 1 lrg Cucumber, sliced
- 1/2 med Onion, diced
- 3 ounce Blue cheese, crumbled
Directions
- Combine all; toss.
- Yield: 8 to 12 servings.
