Ingredients

  • 2 x Lettuce heads, torn
  • 1 x Green bell pepper cut in 1" squares
  • 1 x Red bell pepper cut in 1" squares
  • 1 lb Large shrimp, cooked
  • 13 x Basil leaves, cut in strips
  • 4 x Chive stalks, in 1" lengths Few sprigs parsley
  • 4 x Hard-boiled Large eggs, sliced
  • 1 sprg oregano strip the leaves and use
  • 4 sprg thyme strip the leaves and use
  • 6 x Tomatoes, coarsely minced
  • 1 slc Swiss cheese, diced
  • 4 x Green onions, incl. tops diced
  • 3 x Carrots, minced
  • 1 head of broccoli flowerets
  • 3 stalk celery (up to 4) diced
  • 1 lrg Yellow summer squash sliced
  • 1 lrg Cucumber, sliced
  • 1/2 med Onion, diced
  • 3 ounce Blue cheese, crumbled

Directions

  1. Combine all; toss.
  2. Yield: 8 to 12 servings.
