  • Catfish With Duxelles Baked In Paper

    Ingredients

    • 2 Tbsp. Butter or possibly margarine
    • 5 Tbsp. Minced onion
    • 1/4 lb Mushrooms, finely minced
    • 1 lb Catfish fillets Salt and pepper
    • 1 x -(up to)
    • 2 Tbsp. Lemon juice
    • 2 Tbsp. Chopped parsley Parchment paper or possibly aluminum foil

    Directions

    1. In saucepan, heat butter; add in onion and cook on low heat 4 min. Add in mushrooms and cook on medium-high heat. Stir frequently, and cook till moisture has evaporated. Add in sprinkle of salt and pepper.
    2. Divide fish into 4 servings; sprinkling both sides with salt and pepper.
    3. With skin side down, squeeze lemon juice generously all over fish. Sprinkle parsley proportionately over all. Cut or possibly tear paper or possibly foil into 14x10-inch pcs.
    4. Coat center of each piece generously with butter or possibly margarine. Put fish in the center of each piece. Sprinkle mushrooms on top of all pcs. Fold paper over fish and fold across center, drugstore style. Turn ends up twice. Set pkgs. on oven rack in preheated 400-degree oven for 12-14 min. If using parchment paper, the fish is served in the paper, that is cut open. If using foil, remove foil before serving fish.
    5. Fish wrapped in parchment paper can also be cooked in the microwave. But do not do it with foil-wrapped fish. Put two pkgs. of fish on a microwave safe place and microwave on high for 6 min. Repeat with other packets.
    6. Let stand 1 minute before cutting open to serve.
