Catfish With Coconut Milk
Ingredients
- 3 med size catfish
- 1 Tbsp. veg. oil
- 1/4 c. white vinegar
- 1 x onion, sliced
- 1 x inch piece fresh ginger, peeled and cut in thin strips
- 2 clv garlic, chopped
- 1 c. thin coconut lowfat milk
- 1 tsp salt
- 1/4 tsp black pepper
- 1/4 c. thick coconut lowfat milk
Directions
- Clean fish well and fry in veg. oil. Place fish in a small pan and add in vinegar, onion, ginger, and garlic. Simmer a while and add in thin coconut lowfat milk. Season with salt and pepper, then add in thick coconut lowfat milk. Serve warm with cooked rice.
