Carrots And Rutabagas With Lemon And Honey
Ingredients
- 1 1/4 lb rutabagas peeled, and cut into matchstick-size strips
- 1 lb carrots peeled, and cut into matchstick-size strips
- 1/4 c. butter - (1/2 stick)
- 1/4 c. fresh lemon juice
- 3 Tbsp. honey
- 1 tsp grated lemon peel Salt to taste Freshly-grnd black pepper to taste
- 1/2 c. minced fresh chives
Directions
- Cook rutabagas in large pot of boiling salted water 2 min. Add in carrots and cook till vegetables are tender, about 6 min. Drain.
- Heat butter in large pot over medium-high heat. Add in lemon juice, honey, and peel. Bring to boil. Add in vegetables; cook till glazed, stirring occasionally, about 6 min. Season to taste with salt and pepper. Remove from heat. Fold in fresh chives.
- This recipe yields 6 to 8 servings.
