  • Banana Delight With Lemon Frosted Topping

    Ingredients

    • 1 x 285 g pack hard silken tofu, liquid removed
    • 2 x bananas, roughly minced
    • 1 x lemon, juice and rind of
    • 1 Tbsp. tahini
    • 1 1/2 Tbsp. honey
    • 1 tsp vanilla essence
    • 12 gm margarine or possibly butter
    • 1 1/2 tsp lowfat milk or possibly cream
    • 1 1/2 tsp lemon juice
    • 1/2 tsp lemon zest
    • 225 gm icing sugar
    • 1 dsh yellow food colouring, (1 to 2)

    Directions

    1. 1. Put all the ingredients for the base into a food processor or possibly liquidiser and process till smooth.
    2. 2. Pour the mix into an 1 8cm / 7" greased spring mould or possibly flan tin lined with foil and bake at 350 F/180 C/gas mark 4 for 45 min till just set.
    3. 3. Leave in the tin to cold before removing.
    4. 4. To make the frosting, mix the margarine, lowfat milk, lemon juice and zest together before gradually adding the icing sugar.
    5. 5. Colour carefully with a little food colouring.
    6. 6. Roll into balls about 1.2cm / 1/2" in diameter, arrange over the base and fork down to make a pattern.
    7. 7. Refrigeratefor at least 2 hrs before serving.
