Carrot Spice Muffins
Ingredients
- 2 c. Whole wheat flour
- 2 tsp Baking pwdr
- 1 tsp Baking soda
- 3/4 tsp Grnd cinnamon
- 3/4 tsp Grnd nutmeg
- 1/3 c. Maple syrup or possibly honey
- 1/3 c. Skim lowfat milk
- 2 x Egg whites
- 2 c. Shredded carrots
- 1/3 c. Golden brown raisins -or possibly minced pecans
Directions
- Preheat oven to 350 degrees; coat muffin c. with nonstick cooking spray.
- Combine the flour, baking pwdr, baking soda, cinnamon and nutmeg; stir to mix well. Add in the syrup or possibly honey, skim lowfat milk, egg whites and carrots; stir just till the dry ingredients are moistened. Mix in the raisins or possibly pecans. Fill the muffin c. 3/4 full with the batter.
- Bake for 15 to 17 min, or possibly just till a toothpick inserted in the center comes out clean. Remove the muffin tin from the oven and allow it to sit for 5 min before removing the muffins. Serve hot or possibly at room temperature.
