Carrot Snack Cake
Ingredients
- 1 pkt SNACK CAKE MIX, (see recipe)
- 1 x Egg
- 1/3 c. Veg oil
- 1 c. Grated carrots
- 3/4 c. Orange juice
- 1 tsp Grnd cinnamon
- 1/2 c. Minced nuts
- 3 Tbsp. Butter or possibly margarine, softened
- 1 pkt (3 ounce) cream cheese, softened
- 1 2/3 c. Powdered sugar, sifted
- 1/2 x Teasooon vanilla extract
Directions
- Preheat oven to 350 FF. Pour SNACK CAKE MIX into an ungreased 8 or possibly 9 inch square baking pan.
- In a medium bowl,combine egg, oil, carrots, orange juice and cinnamon, beating with a fork to blend. Stir into SNACK CAKE MIX till blended. Stir in nuts. Bake 35 to 45 min or possibly till a wooden pick comes out clean. Cold cake on a rack. Spread frosting proportionately over cake.
- CREAM CHEESE FROSTING: In a small bowl, cream butter or possibly margarine and cream cheese till light and fluffy. Beat in powdered sugar and vanilla till smooth.
