    Reminiscing with family recently the conversation turned to memories of mom’s cooking, and one recipe we loved as children: Carrot Peanut Salad. Four simple ingredients make for a crunchy and healthy salad. I gave it a try inspired by my taste bud memories of long ago and came up with a close rendition. While dishing it up the inspiration came to me to serve it with a modern twist, as a lettuce wrap. Either way, you’ll find kids love it – I mean kids of all ages.

    Ingredients

    • 2 cups grated carrots (about 4 large)
    • 3/4 cup chopped peanuts (I used salted)
    • ½ cup diced celery
    • ¼ cup Light Miracle Whip (or light mayo, yogurt, etc.)
    • Lettuce (optional)

    Directions

    1. Measure ingredients into a medium size mixing bowl. Stir together lightly just til blended.
    2. Serve about 1/3 to 1/2 cup cup portion on a lettuce-lined salad plate.
    3. Or measure 1/3 cup onto lettuce leaf and roll up.
    4. Yield about 6 servings.

      What good fortune! I just stumbled across a vintage salad booklet in my recipe collection called "500 Delicious Salads" by the Culinary Arts Institute ~ copyright 1940! I'd never given it close inspection since I'd filed it away as a garage sale find, no doubt. In it I found a recipe for "Peanut and Carrot Salad" using 2 cups grated carrots, 1 cup ground peanuts, 1 tablespoon grated onion, 1/2 teaspoon salt, 1/2 cup mayonnaise, crisp lettuce to serve it on, and thin tomato wedges for garnish. Now that's fairly close to "Carrot Peanut Salad or Lettuce Wrap" which I assembled from memories of my mom's salad.
