Carrot Casserole
This is such a quick, easy side dish!! Ingredients
- 2 lb. carrots, diced thick
- 2 Tbsp butter
- onion powder to taste
- salt and pepper
- 6 - 8 oz grated cheddar cheese
- bread crumbs
Directions
- Cook carrots in boiling water for 20 minutes.
- Mash with butter as you would mash potatoes.
- Put in a microwave safe dish.
- Sprinkle with onion powder, salt and pepper.
- Layer cheese on top.
- Sprinkle with bread crumbs.
- Microwave 2 minutes on high or until cheese is melted.
