Carrot Casserole

This is such a quick, easy side dish!!

Ingredients

  • 2 lb. carrots, diced thick
  • 2 Tbsp butter
  • onion powder to taste
  • salt and pepper
  • 6 - 8 oz grated cheddar cheese
  • bread crumbs

Directions

  1. Cook carrots in boiling water for 20 minutes.
  2. Mash with butter as you would mash potatoes.
  3. Put in a microwave safe dish.
  4. Sprinkle with onion powder, salt and pepper.
  5. Layer cheese on top.
  6. Sprinkle with bread crumbs.
  7. Microwave 2 minutes on high or until cheese is melted.
