    Carrot, Banna & Almond Bread

    My Dad is a diabetic and I am always looking for way's to reduce the sugar, add fiber, fruit, veggies & protein. This is easy breakfast or snack food to grab and go that is healthy alternative instead of eating a bag of chips & a soda or going thru a fast food drive thru. Just slice & wrap in plastic wrap and it's ready to grab and go! I hope you enjoy this light & moist Carrot, Banna & Almond Bread. This makes 2 loaf pan's. Tip: You know it is done when a toothpick comes out clean and the sides pull away from the pan. Watch the loafs the last 45 mins to a hour because every oven is different. Be sure and let them cool before you slice & wrap. Option's 1st Optional 1/4 cup of almonds slivers on top 2nd Optional 1 cup of plumped raisins folded in the batter at the end. Or do both!

    Ingredients

    • 1 Cup of Splenda Granulated
    • 1 Cup of Sugar
    • 1/2 Cup of Room Temp Butter
    • 1 Egg
    • 2 Egg Whites
    • 1 Cup of mashed Banna
    • 1/3 Cup Milk
    • 1/3 Cup Greek Yogurt
    • 1/2 teaspoon of white Vinegar
    • 3 Cups Flour
    • 1 Tablespoon Baking Powder
    • 1/2 teaspoon Baking Soda
    • 1/2 teaspoon of sea salt
    • 1/2 teaspoon of fresh grated nutmeg
    • 1 teaspoon of vanilla extract
    • 1/4 Cup of Cinnamon Applesauce
    • 2 Cups of finely grated Carrot
    • 1 Cup of Old Fashioned Oats
    • 1/2 Cup of slivered almonds

    Directions

    1. Prep
    2. Preheat Oven to 300 Degrees
    3. In a small bowl mix milk, greek yogurt & vinegar until blended and let it sit for 10 Mins. ( or you can substitute 2/3 cup of buttermilk for all of these items)
    4. Spray 2 loaf pans with cooking spray & flour sides and bottoms
    5. Prepare
    6. In a mixer put splenda, sugar, butter & eggs and beat until well creamed
    7. Then add the mashed banna's to the mixer & cream until well blended.
    8. Gradually add in flour, stop the mixer and scrape the bowl.
    9. Turn mixer on low and gradually add milk mixture until well blended.
    10. Now add the baking powder, baking soda, salt, vanilla and apple sauce and mix until well blended.
    11. Stop the mixer and scrape the bowl and then fold in carrot, oats and almonds.
    12. Bake
    13. Divide the batter between the two pan's and then sprinkle an additional 1/4 cup almond slivers on top.
    14. Bake at 300 for 45 mins to 1 hour. Your Oven may vary so watch it the last 15 minutes.
    15. Let it cool in the pan on a baking rack.

    17. Option's
