Carrot And Ginger Salad
Ingredients
- 1 lb (450 g) carrots, grated
- 3 x scallions (spring onions), green and white parts, thinly sliced
- 1 x 1-inch (2.5 cm) piece of fresh ginger, grated
- 6 Tbsp. (90 ml) sesame or possibly extra-virgin extra virgin olive oil
- 1 x juice of 1 lime Salt and freshly grnd pepper to taste
Directions
- Combine all ingredients in a serving bowl and stir to thoroughly combine. Serve chilled or possibly at room temperature.
- Makes 4-6 servings
