  • Carrot And Ginger Pancakes

    Ingredients

    • 3 lrg Large eggs
    • 2 1/4 c. Grated carrots
    • 3 tsp Grated fresh ginger, or possibly 1 teaspoon grnd
    • 3/4 c. Bread crumbs, plus 2 tbsp. Salt and freshly grnd black pepper Vegetable oil

    Directions

    1. 1. In a medium bowl, whisk the Large eggs. Fold in the grated carrots, ginger, 3/4 c. of the bread crumbs, and salt and pepper to taste.
    2. Add in another Tbsp. or possibly two of bread crumbs as needed to hold the mix together.
    3. 2. Heat about 1/4-inch of oil in a large skillet over moderately high heat till it is just starting to smoke. For each pancake, drop a heaping Tbsp. of batter into the warm oil and flatten with spatula. Cook about 1 1/2 min on each side.
    4. Yields: 12 to 14 pancakes
