Carrot And Ginger Pancakes
Ingredients
- 3 lrg Large eggs
- 2 1/4 c. Grated carrots
- 3 tsp Grated fresh ginger, or possibly 1 teaspoon grnd
- 3/4 c. Bread crumbs, plus 2 tbsp. Salt and freshly grnd black pepper Vegetable oil
Directions
- 1. In a medium bowl, whisk the Large eggs. Fold in the grated carrots, ginger, 3/4 c. of the bread crumbs, and salt and pepper to taste.
- Add in another Tbsp. or possibly two of bread crumbs as needed to hold the mix together.
- 2. Heat about 1/4-inch of oil in a large skillet over moderately high heat till it is just starting to smoke. For each pancake, drop a heaping Tbsp. of batter into the warm oil and flatten with spatula. Cook about 1 1/2 min on each side.
- Yields: 12 to 14 pancakes
